Ah, pancake day – the one day of the year that breakfast, brunch, lunch, brinner, dinner and supper can all be glutinous, shallow fried and covered in maple syrup.
Banana is one of the main esters of Wheat Beer and tastes wonderful when added to pancakes (as if they need to be better, right?) Follow our simple recipe for craft beer inspired pancakes!
125g Self Raising Flour
About 50ml Wheat Beer
2tbsp Caster Sugar
Pinch of Salt
Combine all ingredients in a blender and mix until it forms a smooth batter. Add more Beer or Flour as necessary to achieve the right consistency – thick and gloopy for US style pancakes, thinner for UK style pancakes.
Fry in a tonne of butter with a little sunflower/vegetable oil to stop the butter burning. Give them a few minutes on each side – bonus points for a successful flip!
Use the remaining Wheat Beer to make a syrup (do this before making your pancakes):
1 bottle Wheat Beer
1 cinnamon stick (optional.)
Combine ingredients in a saucepan and reduce by 2/3 until syrupy but fluid. Allow to cool before using. I made mine with a home brewed Hefeweizen, but for serious banana flavour try Weihenstephaner’s Vitus or Schneider Weisse Original Tap 7.
